Sunday is a traditional day for a big meal, but it's also a day of rest. Get fancy without chaining yourself to the stove with this simple and basic menu. You can have the chicken in the oven in under fifteen minutes, have the potatoes and leeks prepped in ten, and other than looking in on them from time to time, the rest of the afternoon is yours! This is a great basic meal for casual guests or a sit-down family supper.
Easy ingredients:
A chicken, new or mini potatoes, leeks, olive oil, garlic, stock (chicken or vegetable) tomato puree (or a tomato), carrots, celery, onion, corn starch
Not-as-easy ingredients:
Saffron, Spanish (hot) paprika
