I'm rendering a whack of duck fat for some duck confit I'm giving away, sealed in mason jars, for Xmas gifts. It's gonna be awesome.
Holy humbug, Batman - our home is filled with the fragrant fat of canard right now! Kinda coincidental. Only ours is for 1) confit of duck risotto, and 2) cassoulet. Not giving any of that stuff away. It may be better to give than to receive, but best of all is eating. We will include guests, of course, as a gesture.
I'm also doing a ducky thing. Though I confess that for the upcoming Solstice supper, I'm probably just picking up a bbq duck at the Southeast Asian grocery near me, Marché Oriental. I am extremely tired, and hope I'll get my cooking mojo back to make a duck tourtière and other ducky stuff.
Evidently there is an Idle No More event at UQAM on the Solstice, and I think a cousin of mine will be speaking (She's Native, I'm not really). The agora there is a great place for a round dance, and has been the scene of many other events.
Ha! I am visiting my in-laws right now and "forgot" to bring two of the confit jars for gifts. No way out now -- must eat them myself. It's an Xmas miracle!
I also forgot the homemade vanilla extract I made (visiting inlaws at the Evil Empire)
