I suspect the man is a good chef and has proven to be a loyal and silent member of the Conservative clan.  Which explains both why he lost one job and why he found the other.

I take back my initial support for this chef. He's in all likelyhood a fuckin' asshole. He'll fit right in with the Ambrose household.
