Meal planning, vegan-challenge style

Happy Day one of the vegan challenge. How's it going so far? For me, I'll admit it's a challenge. A vegan challenge, if you will.

Since menu planning is such an important part of having any success with this week of dietary change, I thought I'd pull up some links. Check out these delish, delightful, and dietarily appropriate recipes for vegan challenge week. See you in the grocery aisle:

Are you standing there with the fridge door open, wondering how to be vegan today? Well look no further than here for some recipe ideas:

  • Food Not Bombs is an all-volunteer organization dedicated to nonviolent social change. The first group was formed in Massachusetts but there are now chapters from Edmonton to Halifax to Toronto and beyond. Each group recovers food that would otherwise be thrown out and makes fresh hot vegan and vegetarian meals that are served in outside in public spaces to anyone without restriction. Are you as cool as Food not bombs? Join up, or start by checking out recipes for resistance, vegan mac'n'cheese.
  • What keeps a parliamentary reporter tough enough to report on the news that matters? Karl Nerenberg dishes out the Parliamentary news, and also serves up this recipe from time to time.
  • What goes well with bananas, cucumber, and rice? Click here to find out.
  • You've got a lot of meals to plan. Have you considered beets? Good in salad, good in cake. Seriously, what a versatile vegetable! Check it out.
  • Don't forget that punk rockers eat vegan too. And they write their recipes out at the post-punk kitchen.

  • OMGosh some recipes have so darn many ingredients. But NOT THESE ONES. Every single recipe here has five ingredients or less.
