This is a really nice recipe that results in a hearty and healthy meal you’d be happy to eat with your friends. – Libby
Chili with a quinoa twist
1 tablespoon oil
1 cup chopped yellow or white onion
1 cup diced green or yellow pepper
1 28 oz can of diced tomato
1 teaspoon chopped garlic
1 can kidney beans
1 can black beans
1 can chick peas
1/2 cup quinoa
1 can tomato paste
1 cup water
3 tablespoons chili powder
1/2 teaspoon unsweetened cocoa powder
1/2 teaspoon oregano
1/4 teaspoon cumin
dash of salt
dash of pepper
2 tablespoons white vinegar
Heat oil in large saucepan. Stir in onion, pepper and garlic. Cover and cook for about five minutes, or until onion starts to soften.
Add the kidney beans, black beans, chick peas, quinoa, tomato paste and water. Mix in the chili powder, cocoa power, oregano, cumin, salt and pepper and bring the mixture to a boil. Reduce to a simmer and cook uncovered for about 20 minutes. Remove from heat, stir in vinegar and serve.
