I can see now that I’m going to make it to the end of this week (last year, a number of people who took the challenge didn’t make it). With my $26 I was able to purchase sufficient quantity, but not great nutrition. I’ve had no fresh or leafy green veggies, and only one kind of fruit (apples), and I’m craving that. This budget sees you consume a lot of carbs, but few complete proteins. It’s heavy with pasta and bread and potatoes and cereal, and cheap peanut butter with a lot of salt and sugar. The meals fill you up, but not for long. And they leave you feeling sluggish.
BTW, our friends at Raise the Rates have created some videos of people doing the challenge. You can find mine here.
